Ingredients:
1 large eggplant, cut into 1-inch cubes
2 medium zucchini, cut into 1-inch cubes
1 large yellow onion, chopped
4 cloves garlic, minced
2 large red bell peppers, cut into 1-inch pieces
1 (28-ounce) can diced tomatoes, undrained
2 tablespoons tomato paste
1 teaspoon dried thyme
1 teaspoon dried basil
1 teaspoon dried oregano
Salt and pepper, to taste
2 tablespoons olive oil
Chopped fresh parsley, for garnish
Instructions:
In a large skillet, heat the olive oil over medium heat.
Add the onion and garlic and sauté until the onion is translucent, about 5 minutes.
